I'm back!!! Time for Pumpkin Spice Donut Holes!

     Good lord I have not posted in fuh-ev-ahhhhh!  I have a litany of reasons and excuses most of which involve a serial lack of substantial sleep, but who cares about that when we can talk about delish pumpkin donut holes.  I woke up early this morning hopped in the shower because it was freaking freezing outside and my wee little toes were frozen, and thought what would taste warm and wonderful for a Saturday morning breakfast?  This is a recipe that is circulating on Pinterest in various forms, and I finally tried it out and I am rather happy with the results.
Looks tasty huh?  

And they are easy peasy people!

Pumpkin Spice Donut Holes
For the donuts
1 3/4 cup all purpose flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
1/8 tsp ground cloves
1/3 cup vegetable oil
1/2 cup packed brown sugar
1 egg
1 tsp vanilla extract (I forgot this, but I'm sure it makes it better!)
3/4 cup pumpkin puree
1/2 milk (I used non-fat, but I'm sure any kind will work)

For the topping
1/2-1 stick melted butter
2/3 cup sugar
2 T cinnamon

Preheat oven to 350 degrees.  Grease mini-muffin pan with non-stick spray or butter.  Mix together flour, baking powder, salt, and spices, set aside.  In a separate bowl mix together vegetable oil, brown sugar, egg, vanilla, pumpkin puree and milk.  Add the dry ingredients to the wet ingredients gradually and mix until just combined.  Spoon into mini-muffin pan until almost full.  Bake for 10-12 minutes.
Allow to cool for a couple of minutes.  Melt butter.  Mix together sugar and cinnamon.  Take the warm pumpkin donut holes and dip on all sides into the melted butter.  Place into the sugar cinnamon mixture and spoon sugar over donut holes until thoroughly covered.  

These are soooo yummy with a got cup of coffee!  That's Big D snarfing down the donut holes with coffee in the background!
