What's cookin?

     This will be the easiest thing you ever make.   And don't tell me that you just toasted a Pop Tart, and that was the easiest thing you ever made.  OK, this is the easiest thing you will ever make next to toasting a Pop Tart...we're talking easy people.  Because let's face it, you need something pretty, pretty easy when you're ready to fill up giant bowls of Mini Wheats and tell the family to have at it, because there is no way you are cooking a meal over a stove, in an oven, or any other kitchen device that produces heat and requires you to break a sweat.

Tomato and Goat Cheese Tart
     (calm down people, it sounds fancy, but I promised easy)

You will need wee little tomatoes...
 Some fattening yet oh so tasty puff pastry...
 Thyme


And...
4 oz Goat Cheese...I like Mont Chèvre, but pick your personal fave
Salt and Pepper to taste

  1. Set out frozen puff pastry around 45 minutes before you are ready to bake
  2. Preheat oven to 375 degrees
  3. Place puff pastry on parchment lined sheet
  4. Cut tomatoes in half and place on top of fattening, but oh so tasty puff pastry
  5. Put dots of goat cheese over slice tomatoes
  6. Sprinkle with fresh thyme (you could also use basil, oregano, or a combination of all three)
  7. Salt and Pepper to taste
  8. Bake until puffed and golden (about 25-30 min)
