Tomato and Goat Cheese Tart
(calm down people, it sounds fancy, but I promised easy)
You will need wee little tomatoes...
Some fattening yet oh so tasty puff pastry...
Thyme
And...
4 oz Goat Cheese...I like Mont Chèvre, but pick your personal fave
Salt and Pepper to taste
- Set out frozen puff pastry around 45 minutes before you are ready to bake
- Preheat oven to 375 degrees
- Place puff pastry on parchment lined sheet
- Cut tomatoes in half and place on top of fattening, but oh so tasty puff pastry
- Put dots of goat cheese over slice tomatoes
- Sprinkle with fresh thyme (you could also use basil, oregano, or a combination of all three)
- Salt and Pepper to taste
- Bake until puffed and golden (about 25-30 min)
